The right glass and the perfect pour
The Kölschstange is the classic glass for Kölsch and an essential part of Cologne brewhouse culture. The tall, slim glass is around 15 centimeters high, about 5 centimeters wide and holds exactly 0.2 litres. There is a good reason for its size. Kölsch is less carbonated than many other beers, and its foam settles more quickly. In a larger glass, the beer would warm up more quickly and loose its freshness. The narrow shape of the Kölschstange limits contact with the air, helps keep the carbonation in the beer and keeps the Kölsch fresh for longer. It is simply the ideal glass for enjoying Kölsch. That is why, as part of the Kölsch Convention on 6 March 1986, Cologne breweries agreed that Kölsch should only be served in a Kölschstange. The pour matters too: Kölsch should be poured smoothly, with no more than one brief stop. The glass is held at a slight angle under the tap and the beer should flow gently without splashing. The less oxygen that gets into the glass, the finer the foam. That way, your Kölsch stays fresh right down to the last sip.
